Two years ago, we dug up a bit of our backyard to put in a raspberry bed. Since raspberries are my absolute favourite, this made me a very happy girl. We started with just a few canes from a friend (thanks, Alicia!), and, surprisingly, got a few berries that year. The canes also started sending up their own starts. Last year, the raspberries started taking off, and we were able to eat a handful of berries or so at a time.
This year, the raspberry bushes exploded!
Instead of just a few handfuls of berries, this year we are picking up to 5 cups at a time. This made it possible for me to make a raspberry pie with my own berries. Usually, I watch for raspberries to go on sale - if they ever do - and make a pie. Homegrown berries are so much more delicious!
This was a no-bake pie, with a pre-baked spelt crust, and a raspberry Junket Danish Dessert glaze. That stuff stains like crazy, though, so I had to be careful. The only other problem was deciding whether to cut it into sixths or eighths :) We went for eighths, and topped it with Cool Whip. YUMMY!



Woohoo.. LOVE raspberries. Will be putting in a couple bushes next year, and I can't wait til they start producing!
